This salad is a perfect balance of sweet and savory, featuring fresh greens, honey-roasted sweet potatoes, juicy peaches, and a delicious honey peach vinaigrette made with Mountain Valley Sparkling White Peach.

De'Asia describes it as “fall in a bowl,” packed with flavors that include dried cranberries, pomegranate seeds, goat cheese, and crunchy pumpkin seeds. Trust us—the mix of sweet and savory is an absolute chef’s kiss!

For the Salad: 

  • 2 cups mixed greens (lettuce, spinach, or arugula
  • 1 cup sweet potato, cubed & roasted
  • 1 ripe peach, thinly sliced
  • 1/4 cup dried cranberries
  • 1/4 cup pomegranate seeds
  • 1/4 cup crumbled goat cheese or feta
  • 2 tbsp roasted pumpkin or sunflower seeds
  • 1/2 avocado, sliced (optional)

For the Honey Peach Vinaigrette:

  • 1/4 cup peach puree (or blended peach)
  • 2 tbsp apple cider vinegar
  • 2 tbsp Mountain Valley Sparkling Peach 
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/4 cup olive oil
  • Salt & pepper to taste

For extra flavor, season your roasted sweet potatoes with a little cinnamon, olive oil, and a drizzle of honey or maple syrup. This will perfectly complement the sweetness of the peaches and cranberries!
